A difference between the praline [chocolate] makers, is that the ones buy a “standard” chocolate and the others - recognized “Ambassadors of the Belgian chocolate” - have the possibility to choose themselves the mixture of broad beans which they want to use. Jean-Philippe Darcis is one of these; he proposes 36 varieties of pralines from 8 to 10 gr. each one and a macaroon collection.
